Crock Pot Turkey & Wild Rice Soup

Crock Pot Turkey & Wild Rice Soup
The kids loved this one and I thought it was a perfect mixture of texture and taste (yes, even with the spinach)!
Ingredients
2 cups of cooked turkey
8 cups chicken broth
2/3 cup uncooked wild rice
1 yellow onion, chopped
1 cup chopped celery
1 cup chopped carrots
1 tsp sage
1 clove garlic, minced
2 T balsamic vinegar
2 cups spinach leaves (from the bag works great!)
Directions
I used a 5 quart crockpot.
Pour in broth, & add cooked chopped turkey.  Chop up the vegetables (not the spinach), and add to the pot.  Dump in the wild rice, sage, and balsamic vinegar.  Stir.


Add two heaping handfuls of baby spinach to the pot. It will look like a lot, but will shrivel down nicely while cooking.


Cover and cook on low for 8-10 hours, or on high for 4-6. 

The soup is done when the vegetables have reached desired tenderness. There is a lot of volume here; this is a good candidate for a day when you are out of the house for a long time. No need to worry about it over-cooking.

hi--this recipe looks great and i'd love to try it, but i have a question. in the directions, you say to add a bullion cube in along with the sage, but you don't say what kind of bullion in the ingredients. i'm much of a cook so i don't want to guess!

Thank you for stopping by Good Stuff Maynard! I'm glad you asked about the Crockpot Turkey and Wild Rice Soup - so sorry for the mix up. I omitted the bouillon cube altogether (it was used only if you're using a turkey carcass...which is gross! LOL) So just follow with the broth and you'll be good to go! :)
